Authentic Southern Banana Pudding

Over 50 years ago, my grandma taught me a secret about banana pudding that most people ignore. It’s the difference between a "good" dessert and a memory that lasts a lifetime. This recipe is more than just dessert; it’s a taste of summer weekends, family reunions, and home. My mom and my grandma both made it this exact same way, and today, I’m sharing those 4 essential steps with you.

What You'll Need

  • 2 Boxes (4.6 oz each) Jell-O Cook & Serve Vanilla Pudding (Do NOT use instant!)

  • 6 Cups Milk (This is for a double batch—perfect for sharing with neighbors.)

  • 1 Standard Box (11 oz) Nilla Wafers (Accept no substitutes for that authentic texture.)

  • 6 to 8 Ripe Bananas (Sliced thick so you get a real bite of fruit.)

The 4 Steps Grandma Taught Me

  • Step 1: The Foundation. Cook your pudding and milk, stirring constantly scaping the bottom and sides. If you don't, it’ll burn on the bottom. We want that rich, decadent texture—not the fake stuff you get from instant pudding.

  • Step 2: The Chill. Press plastic wrap directly onto the surface of the hot pudding. This stops that "skin" from forming. Let it set in the fridge until it's completely cold.

  • Step 3: The Build. Grab a big glass bowl so everyone can see those layers. Line the bottom and sides with wafers, then pudding, then a thick layer of bananas. Repeat until it's almost overflowing

  • Step 4: The Secret. This is the step nobody wants to do: Put it in the fridge overnight. You need at least 4 hours, but overnight lets those cookies soak up the "banana juice" and everything melds together perfectly.

Wait until you see how the wafers transform after sitting in that pudding—they turn into a cake-like texture that you just can't get any other way.
